Gregg's Banana Nut Bread

½ cup shortening
1 cup sugar
2 cups sifted flour
½ tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2 eggs
½ cup chopped pecans
3 lg. or 5 sm. ripe bananas-mashed and beaten to soft smooth pulp

Cream shortening and sugar well. Add one Tbsp. flour. Beat in the eggs one at a time. Alternately, add remaining flour and banana pulp. Reserve ½ cup flour and sift with the salt, soda, and baking powder. Add with nuts. Pour batter into well-greased bread loaf pan, pulling dough to ends and sides of pan to make well-shaped loaf. Bake 1 hour @ 350º. (Gregg loves to bake.)
