1 9-inch unbaked pie shell
3 lg. eggs
1 ½ cups sugar
1 Tbsp. cornmeal
1 Tbsp. vinegar
½ cup butter, melted
1 Tbsp. vanilla
Beat eggs with fork until light; add sugar, cornmeal and vinegar. Stir to mix well, but do not beat. Add cooled butter and vanilla; stir to mix well. Pour into pie shell. Bake @ 350º for 60-65 minutes.
